Cajun Dirty Rice Jambalaya

We all need more 1-pot meals for our busy weeknight schedules. This recipe is ready in about half an hour and offers a simple way to spice up your routine.

Easy Cajun Dirty Rice Jambalaya


  • 1 cup Cajun Dirty Rice
  • 1 chicken breast, cut into bite size pieces
  • 8 ounces Andouille sausage, cut into bit sized pieces
  • 1 cup diced canned tomatoes
  • 2 cups water
  • 2 green onions, sliced
  • Hot sauce (optional)


  1. Combine Cajun Dirty Rice, chicken, sausage and tomato in a 1-quart pot. Stir in water. Bring to a bowl over medium-high heat. Reduce heat to a low simmer and cover. Cook for 20 minutes.
  2. Remove from heat and let stand for 5 minutes. Remove lid and fluff the rice. Serve with sliced green onions and hot sauce, if desired.
