Our Red Wheat Berries are protein-rich winter hulled wheat kernels with their bran and germ layers intact. The least-processed form of wheat, they absorb liquid well and are ideal for everything from salads, cereals and soups, to baked goods and desserts. They have a nutty taste and chewy texture.

  • Serve in sides, salads or add to soups or stews
  • Cook with milk, cream, sugar and spices for a hearty variation on rice pudding
  • Can be used as substitute for rice as a pilaf dish

Soak 1 cup of Red Wheat Berries for 8 -12 hours.  Drain, add to pot with 3-1/2 cups water or stock and bring to boil. Reduce heat, simmer, covered, for 50 minutes. Drain if needed, fluff with a fork. Yields 3 cups cooked.
