Black Beluga® Lentils are tiny, jet-black, lens-shaped legumes that are known for their striking visual appeal, similar to beluga caviar. They not only resemble their namesake, but are almost as rare. They have a mild flavor and firm texture, holding their shape through cooking.

  • Toss with vinaigrette and add to a salad
  • Mix with breadcrumbs, onion and garlic and use to stuff peppers or eggplant


Carefully sort and rinse lentils thoroughly. Add 1 cup of lentils to 4 cups of water. Bring to a boil, then reduce heat to a simmer. Cook for 15-20 minutes. skimming any foam from water. Yields 2 cups cooked.
