Cannellini Beans are white kidney beans with a mild, nutty flavor and smooth, tender texture. They are extremely popular in Italian cuisine, and hold up well with cooking. They resemble kidney beans in size and shape, but are creamy off-white in color.

  • Add to soups, salads and side dishes
  • Make a creamy hummus or blend into other bean dips or purees
  • Slow-cook with garlic, olive oil and rosemary for a hearty bean stew


Carefully sort beans and rinse thoroughly. Soak beans in three times their volume of cold water for 6 – 8 hours. Drain soaking water, add fresh water to cover beans by 3 inches. Bring water to simmer, and cook beans, uncovered, until tender, approximately 1-1/2 to 2 hours. Season with salt in the final stages of cooking.
