Gigante Beans are extra-large white runner beans, common in Greek cuisine. They have a sweet, mild taste and a meaty texture, and hold their shape well through cooking. They contain high levels of protein, essential minerals and fiber while maintaining a low level of fat.

  • Try in marinated salads, as they hold their shape and absorb flavor well
  • Add to soups and stews to add heartiness
  • Pair with poultry, seafood and sturdy greens, like kale

Carefully sort beans and rinse thoroughly. Soak beans in three times their volume of cold water for 8-12 hours. Drain soaking water, add fresh water to cover beans by 3 inches. Bring water to simmer, and cook beans, uncovered, until tender, approximately 1-1/2 to 2 hours. Season with salt in the final stages of cooking.
